Eat all week (or for 3 days if you're greedy like me) for under $15 ๐Ÿ˜‹

If you're always on the go and also pretty lazy when it comes to cooking, this recipe is for you. Literally, set it and forget it. Don't you just love crock pots? Since being a college student is pretty much synonymous with being broke as hell, I've had to get pretty creative with my recipes so that I have enough gas to make it to class. Check out how I whipped up some pretty tasty carnitas below:

So Thursday night I was missing good ole Cali-forn-i-a (as I often do) and I decided to to attempt the ever so delicious carnitas street taco. Pork butt was on sale for $7 and I already had all of the spices I needed at home so I just snagged some onions, cilantro, and tortillas.

It's been a while since I've had some authentic Mexican food (thanks a lot, Georgia) but I figured I'd give it a go and if it turned out alright I'd blog about it and tell you how I made it.

Disclaimer: I'm not a super fancy food blogger so we're gonna use estimates here and you can tweak as you see fit.

What You'll Need

A crock pot
Pork Butt (or shoulder)
Cheap tortillas 
Green Onion
Red Onion
4 Limes
Fresh Garlic

Random seasonings from your spice rack (cumin, chili powder, paprika, garlic powder, salt, pepper, onion powder, and cayenne pepper)

Coronas. Yes, they're mandatory for sips in between all the heavy chopping we're going to be doing.


Let's do this. 

Keep in mind that this recipe isn't 1000% authentic bc I ended up using low carb tortillas (they were on sale and buy one get one free) instead of the traditional corn tortilla. Use whatever is economically sound (aka cheapest). Don't worry, it won't compromise taste. 

      Take a sip from your corona. Slice up a lime into wedges. Stick a wedge into the corona. Take  another sip. 

      Take the pork butt out of the packaging and rinse thoroughly. Pat it dry with paper towels. Set aside. 

      Make the dry rub. Grab a container (I used dollar tree tupperware) and pour your seasonings in. Stir the spices in together. Take a sip from the corona. 

      I don't use measuring cups but here's a rough estimate of my proportions. 
        •  1/3 cup of cumin
        •  2 tbsp salt  
        •  2 tbsp pepper
        • 1/2 cup garlic powder
        • 1/2 cup onion powder
        • 1 tbsp paprika
        • 1/4 cup chili powder
        • couple of dashes of cayenne pepper (optional)        
     Rub the seasonings on the butt. No, not your butt. The pork butt. Make sure it's well saturated. Then set it in the crock pot on HIGH for 5hrs or LOW for 8hrs. 

     Dice the red and green onions and also the garlic. Shred or chop the cilantro-whatever you're into.     Throw the garlic into the crock pot. Slice a lime in half and squeeze the juice from both halves into     the crockpot over the pork butt. Now you can go take a nap or go to class or binge watch Shameless on Netflix for a few hours. 

    When the timer goes off check the pork butt, it should be pretty much falling apart...like me during     finals. Use two forks to shred the pork. If you want, you can warm the tortillas by nuking them in       the microwave for about 10 seconds or on the stovetop. Top with pork, onions, and cilantro and you're good to go!

Body Positivity, Weight Loss, + Impromptu Photo Sesh

SO yesterday I got out of my creative slump and decided to go out and enjoy the day in celebration of  the first day of Spring Break! I was lucky enough to rent a cannon from my university's library for the week so I'm super excited to FINALLY be able to vlog on the go instead of just around the house. Lit! Here's my favorite shot from yesterday:

    A friendly bystander actually took this shot for me. I LOVE it. I usually shy away from posting full body pics on social media because people can be so critical of others and it can really take a toll on your self image. Buuutttt....this romper had me feeling like a hippie peacock so it deserved some camera time ๐Ÿ˜‚

A little about my weight loss "journey": 
       I've basically been on some sort of diet for as far back as I can remember. On the last day of school in 5th grade our teachers planned a park field-trip and I remember being so excited for free dress I spent a whole weekend shopping with my mom for the perfect outfit. I rocked a pair of dark denim shorts and a pink beaded tank. Ya girl was feelin' herself, mmkay? I also remember spending the majority of that day crying in the park bathrooms after being called a "ghetto hoochie" by a group of girls and having boys joke about how big my thighs were.  I remember feeling self-conscious about my body in a one piece at 10, after an older boy made a comment about my belly fat. In high school I failed gym because I refused to don a swimsuit and stopped going (the last half of the school year was swimming lessons).

I've drank exorbitant amounts of green tea

I've starved myself

I've tried the 3-day diet

I've tried Atkins

I tried yoga, workout DVDs, running, slim fast, nutrisystem, the lemonade diet, the grapefruit diet, the Mediterranean diet, intermittent fasting, hydroxycut, and a million other diet pills...

All before the age of 21.

Even at my lowest weight, I have always been an extreme pear shape (size 28 waist and size 46 hips) which to some may not seem like a problem but for me...it eliminates the possibility for me to wear things like shorts, miniskirts, or even dresses that are more than 2 3/4 inches from the knee (yes, I've measured) without looking provocative or worrying about being perceived as "skanky".

With that being said, wearing a romper that pretty much put my biggest insecurity on display was ballsy for me. Terrifying, even. But also....liberating. 

I think often times we spend too much time worrying about what people will say or think about our bodies when in actuality, I've never looked at another individual and obsessed over or spent time critiquing their body. Have you? Probably not. So today, I had a revelation. I said to myself, "Self," and my self said "huh?"


Wear the damn shorts and the camel toe inducing romper ๐Ÿ˜‚ Who cares? Not me. Not anymore.
